In recent years, public anxiety and concern are arising out of the increasing number of food incidents from around the world. In 2000, there were 618 food poisoning cases involving 2452 victims in Hong Kong. The food trade is responsible for manufacturing and selling safe food in order to enhance the consumers' confidence.
In Hong Kong, siu mei and lo mei are popular Chinese cuisines. They are ready-to-eat food characterized by being handled a lot with bare hands and displayed for sale under ambient temperatures at the retail outlets. These foods are therefore liable to contamination with and growth of pathogens.
The aim of this training material is to enhance food safety knowledge on selling of siu mei and lo mei and to introduce the application of Food Safety Plan to the food handlers working in the relevant premises.
