Introduction

The Food Safety and Technology Research Centre of the Hong Kong Polytechnic University was commissioned by the Centre for Food Safety, Food and Environmental Hygiene Department to conduct a study on deep-frying oil and devise a set of Guidelines in order to assist local food traders in ensuring food safety and enhancing food quality.
